Recipe Helper

I was meal planning for this week and wanted to find a new way to eat my oatmeal/protein meal. I was coming across too many unfortunate adventures involving the microwave and oats and protein powder burning. I looked for a recipe and tweaked this one from dashing dish. Here is my version.

Baked Peanut Butter Oatmeal Muffins
(carb meal for post workout with whey protein)

2.5 cups Bob's Mill gluten free old fashioned rolled oats
1 cup 0% Fat Free greek yogurt
3 scoops Designer Whey vanilla protein powder
2 egg whites
1/3 cup unsweetened almond coconut milk
1.5  tsp baking powder
1/2 tsp baking soda
4 tbsp PB2 Chocolate
- blend in a food processor and pour into 12 lined baking cups (I sprayed mine with cooking spray to help them not stick)
Bake at 350 for 20 min or until golden brown

I thought this would be a quick meal to eat post workout as I drive from the gym to work. I didn't add strawberries due to the fact I am 3 weeks out from a competition and cutting fruit.

I didn't add the stevia because I was adding protein powder but they could definitely use some sweetness and more moisture. I think next batch I'll add some unsweetened applesauce, peanut butter extract and stevia. For now they can be spread with a touch of almond butter or unsweetened applesauce.
