Catch Up

Okay, I know I have been MIA but please know that my lack of time I have invested blogging is not a reflection of the lack of energy and time I have continued to put into my goals, promise! Things have simply been busy around here. Matt and I were busy almost every night last week. Tuesday night was Matt's work party. They actually had a great selection of grilled chicken and veggies that I enjoyed and 4 glasses of iced water and lime. Wednesday night we took Matt's dad who was visiting to our favorite burger joint, Hopdoddy. I enjoyed a turkey patty and salad. Thursday night I made homemade rice krispie treats for my husband. I made the marshmallows from scratch using agave syrup (a natural, low glycemic index sweetener) so they were slightly more natural, healthy version. I got the recipe here. Saturday we drove in to Fort Worth to spend the weekend celebrating Christmas with our families. My mom bought us all matching PJs. Here is a picture of me and my sisters Christmas morning.
This week I created a great menu plan that I have been enjoying.
Meal 1: Protein Smoothie
1/2 frozen small banana
1 scoop whey protein powder
2 tbsp PB2 chocolate
2 tbsp ground flaxseed

Meal 2: Spinach Scramble
6 egg whites
2 cups spinach
1 garlic clove
5 grape tomatoes
1 fat flush tortilla (these are great!)
Meal 3: Pumpkin Mouse
1 cup 0% greek yogurt
1/2 cup canned pumpkin
2 tbsp Psyllium flakes
I let the flakes site overnight and it creates this thick texture that keeps me nice and full

Meal 4: Tofu Broccoli
3 cups Broccoli
2/5 block firm tofu
1 tbsp peanut sauce

Meal 5: Chicken Veggies
1 ground chicken breast patty
2 cups spinach - sauteed with garlic

I have had great workouts this week as well. Monday I did alot of glute/leg work and cardio to burn a total of 850 calories. Tuesday I focused on cardio and did 2 insanity DVD workouts and did some running to total 800 calories. Today I had group training and did an additional cardio session tonight to total 1,100 calorie burn. If you can't tell, Im kinda starting to freak out that this thing is 31 days away. I have been trying to lay the cardio on thick since it is what I need the most right now. My muscle development is right on target and actually might be a little on the 'hard' side. I debated posting a picture but I think I'll keep you in suspense just 31 days longer.

I am still surprising myself with my own body every day.
- I have officially lost 2 inches around and nearly 2 cups sizes. If you know me, then you know the irony of this. Who knew I could completely transform that in 8 weeks!
- There is a space in between my thighs when I put my legs together.
- My veins stick out a whole lot more. I appreciate this seeing as I start IVs for a living.
- I have a new butt. Seriously! I created this whole other upper butt muscle I have never had before. I love the curve that it gives. I have been working hard to create this. Notice on Alison the sharp curve between her lower back/waist and butt due to developing that "shelf".
In other news, I ordered my shoes today and start posing practices next week. I gave up on finding a half size and ordered a 10 that had back straps for more stability.


Push yourself this week! Don't wait till Jan 1. Why not start today? Do something incredible that makes you feel good about yourself. For me it is seeing just how many calories I can handle burning during the day. Your body is an amazing thing and deserves to be challenged and rewarded with proper nutrition and hydration. I promise to try harder at updating this week.
