Recipe Helper

My husband and I went to our local movie theater and saw a special screening of Home Alone this weekend. I surprised my husband with tickets because he loves Home Alone AND it included an all you can eat pizza party during the movie.

 I might need to mention that pizza is his favorite food. Now don't be alarmed. I chowed down on salad and an order of spaghetti squash with chicken. I have never had spaghetti squash but I remember my trainer mentioning it the first day I met her and I was eager to give it a try. It was so tasty that I replicated it and made a yummy dinner last night. Here is the recipe.

1) Take one spaghetti squash, wash it and cut in half.



 2) Drizzle it with olive oil

 3) Place cut side down on a baking sheet. Bake at 375 for 45 min
 4) Scoop out the seeds and the shred with a fork
 It looks like spaghetti!!
 I paired mine with ground bison from the night prior and some all natural pomodoro sauce from central market that has about 35 calories per 3/4 cup.
 Delicious!! I couldn't eat it all. The one squash made a whole lot. What do/would you pair with yours?
I have met my target fitness and nutrition goals the past 2 days. Monday I burned 800 calories between sprint training and upper body and ab work and yesterday I burned 881 calories between stair climbing and my group training workout. I'm now off to the gym to get in some incline training before my evening group training workout. I think I'll pair my left over squash with some steamed broccoli and tofu tonight.
 I feel empowered by the simple act that I was literally surrounded by candy and cookies all day at work and resisted each and every one of them. I am better than that sugar and I need real food to give me the energy I need to bust out these crazy workouts! Resist that work Christmas goody. Do it once and it will only get easier and easier.
