Week 6 - almost half way there

I am starting my 6th week in the program and I am more anxious and determined than ever to meet the half way point feeling good about myself and all my accomplishments. I am excited for the week ahead of continuing to learn about making even better nutrition choices and meet my fitness goals. I am working mornings this week from 5:30am to about 2-3:00pm. This means I will face a new challenge of completing longer workouts during the evening hours as opposed to breaking them up over the day. I have learned to love my AM workouts so I am a little anxious about the change but know I can do it.
I love the way I look at food now. Not so much as what sounds good to eat, but using my meals to literally replenish nutrients I feel are lacking or needed. One thing I have been missing in my diet is enough fiber. I created a breakfast casserole for the week in which I added some black beans. I normally shy from ingesting legumes due to their carby nature and trying to avoid carbs during the evening hours (when they sound the most tasty of course). Here is the recipe I created.

Whittney's Mexican Casserole Bake
16 egg whites
1 cup fat free cottage cheese
3 oz fat free feta
1.5 cups black beans - no salt added
8 oz lean ground turkey breast
handful of cherry tomatoes

I browned the meat and then added all the ingredients together and baked them at 350 for about 45 min. I didn't add any seasoning but topped it with some delicious green chile salsa. It was SO good. I paired it with a piece of toast that is heavy in fiber and protein called Mack's Flax. It is 100 cal a slice and has 5 grams of protein and 5 grams of fiber. Not the best pictures, but I swear it taste good.


 I am planning on focusing a lot of attention on my butt and legs this week. I really want a "shelf", if you may, on my backside. My butt tends to get flatter than rounder if I loose weight so I have to work hard on making it stick out there. I am also anticipating a "swoop" (as my trainer calls it) in weight loss this week. I lost a decent amount the week before and not so much last week. Im due to be excited when I look at the scale.
I had my works Christmas party last night and received my first real spray on tan by a person (not a booth) and was highly impressed. I went to Renee at Airbrush Studio of Austin. She was excellent! Here are some pictures so you can see the results of my tanning and hopefully notice my arms starting to look better.
